BlackBerry Cobbler

May 18, 2011 | Uncategorized

If you will remember awhile back, Bobby and I discovered a ton of blackberries growing in the woods by our house, so we gathered up a ton and I found an easy recipe for Blackberry Cobbler. It was so good I made another one for game night with my Bible study group, and it was a huge hit!

lots ‘o Blackberries!

I will admit, it was kind of fun picking the berries, then randomly having all the ingredients I needed in the kitchen and making the cobbler!

when I first put it in the oven…

coming out of the oven!!! Yum!

It’s even better with vanilla ice cream. Trust me. We picked so many berries I had to freeze some because they were starting to get squishy. Ok, so here is the recipe:

1/2 c. butter
1 c. all-purpose flour
1 c. sugar
1 tbsp. baking powder
1/8 tsp. salt
2/3 c. milk
1 (16 oz.) pkg. frozen blackberries, thawed (I used fresh, of COURSE! and I didn’t measure, I just made a judgment call…)

Melt butter in a 2 quart casserole. (I used a square glass pan). Combine flour, sugar, baking powder, salt, and milk in a small mixing bowl, mix well.

Pour mixture over melted butter, do not stir. Spoon blackberries over batter; do not stir.

Bake at 350°F. for 45 minutes or until golden brown.

That, my friends, is it! So simple, right? Enjoy!

QOTD: What is your favorite kind of cobbler?

This looks amazing! I’ve made this before with blueberries, but not blackberries. I’ll have to try it!

I don’t know if I am really a cobbler person. LOL. Or blackberries for that matter…unless they are fresh on a fruit tart. I have issues with seeds. LOL. Since you have so many, and access to more, you should make jam! Or jelly if you don’t want seeds.

lol! sometimes the seeds bug me but they are yummy regardless!

We take her on these trips and cruises hoping she’ll soak in the adventure, the beauty, and maybe even the food from places different from where we live… but to her, nothing beats a corn dog and mac & cheese. 🧀

And honestly, that’s the best reminder for us, that joy doesn’t have to be fancy, it just has to be yours. 🛳✨

YES I was dancing, eating mac and cheese from the YES I was dancing, eating mac and cheese from the kids menu, and singing “Let it Go” with a butter knife while wearing Mickey ears on our Disney cruise. 🚢

When I was 12, I was worried a lot… worried about failing, scared of what people would think of me, and of not fitting in or being “cool”.
I turned 40 this year and have been spending time trying to figure out exactly who I really am with all expectations stripped away. I don’t love the term “finding yourself”, but here I feel like it fits. ✨

Maybe finding yourself means going back to being 12.… and being myself without being scared. Heather at 12 would never believe this version of me… but I think she’d be proud. 💛✨

Ever wondered what extra magic you can add for a b Ever wondered what extra magic you can add for a birthday onboard a @disneycruiseline ship? 🚢

Emma Kate turned 11 last month during our sailing and we did so many birthday things! She got a ton of “happy birthday’s” from crew and guests to make it extra special. ✨

👉🏻For a link to the birthday ears she wore (they have lots of colors and variations!) comment “EARS” and I will send it to you!

This is 11. ✨🎉 Not sure how this happened, b This is 11. ✨🎉

Not sure how this happened, but time snuck up on me and now I have an 11 year old. 🥹
We couldn’t think of a more fun place to celebrate that on Castaway Cay, Disney’s private island in the Bahamas.

She started the day with presents, then hours and hours in the sun on the island, followed by cake and singing at dinner, the tween club, and fireworks at sea! (They were for pirate night but we said they were birthday fireworks!)

Happy birthday to the most fierce, kind, competitive, loyal, funny, and beautiful little girl I know. 🩷 Never change who you are and stop growing up so fast! So. Blessed to have the best title there is, Emma Kate’s mom. 💖
