Easy Chili

Good afternoon! I hope everyone is having a great hump day! I have been pretty productive today. Bobby and I got up and ran 4 miles, our last run before the half. We were scheduled to do 5, and I even had my alarm set…but..you can’t hear your alarm if your phone is on silent now can you? We were running late so we just did 4 miles then went to the chiropractor, cleaned out more stuff at Bobby’s dad’s ate lunch, and now we are waiting for the AT&T guy to come because our internet is acting up. Don’t you love how they give you those windows of time…”Someone will be there between 1-5.” Not cool! We have to go BACK to the chiropractor later and then dinner with friends.

 

Ok, here is the easy chili recipe I promised. I kind of made it up, so you can change things to your liking. I think it came out good! This amount was enough for 4 large bowls.

 

-1 .5 pounds meat (we used ground sirloin)

-1 can Busch’s beans in chili sauce

-3 tsp of chili powder

-1/4 of an onion chopped up (I am not a huge onion fan)

-1 small can of tomato sauce (like the little mini cans)

-water (I used two cans worth of the beans can)

 

directions:

-chop up onion

-brown meat, then add onion

-drain excess fat

-put into a pot with rest of ingredients, simmer for 45 minutes (the longer the better)

 

We served ours with crushed multigrain tortilla chips and cheese on top. and served with bread. It was great for the cold weather we had for a couple of days!

    You’ll do great in the half. I know how you feel about busy. I am swamped until my marathon next weekend!

    I’ve never had chili since I don’t eat red meat. I should try a veggie option though. My favorite food for cold weather is hot chocolate 🙂

    Yum! I love eating chili, stew, and hearty soups in the fall. Especially w/grated cheese sprinkled on top!

    We had chili tonight! My recipe is similar to yours. We had cornbread muffins on the side.

    My favorite cold weather food is chicken and dumplings. Yum!

    The alarm on my iPhone sounds even with the phone silenced. And we had chili for dinner tonight too, with cheese bread (GF). Sorry about your internet – that’s an absolutely vital service to have!!

We didn’t set out looking for a “perfect” trip… we We didn’t set out looking for a “perfect” trip… we just needed a break from the noise.
What we found in Florida was something better than that. #ad

Our first stop in Auburndale was all about slowing down in the best way. We stayed in a cozy tiny home at Camp Margaritaville (you can also stay in an RV!). We enjoyed coffee on the porch, our daughter loved the pool and waterslide (there is even a splash zone for the littles!), and at night we slowed things down with s’mores instead of screens. It felt like nature + comfort + family time all finally in the same place. They have so many other amenities like mini golf, golf cart rentals, pickleball, a playground, cornhole, and more. Nearby, we explored the Florida Children’s Museum and had incredible food and drinks at Smith’s American Tavern and Black & Brew Coffee. 

Then, we headed over to Fort Myers to experience a completely different side of the state. Shelling walks at sunrise, beach volleyball, pool cabanas, and the kind of Gulf sunsets that make everyone go quiet for a minute. Direct beach access at the Margaritaville Beach Resort Fort Myers made it effortless to go from “let’s check it out” to toes in the sand in minutes. There were several restaurants on property, so we never even got in our car. That plus live music, fire pits, the spa, and lawn games made it easy to want to stay put and relax.

What stood out most wasn’t just the scenery… it was how easy it was to actually be together here. No rushing or overplanning. That’s the true Floridays feeling for me. Laid-back, a little unexpected, and exactly what we didn’t know we needed. 🌴☀️
