Emma Kate: 8 Years Old

Yall. I feel like such a bad mom. I have been recording Emma Kate’s birthday and stats every year since she was born, and I failed this year! Her birthday was in September, but we were not able to get her in for her well visit until this past week (long story, we moved, it was impossible to find someone new with our insurance.) Anyway, I finally got her “stats” and I was going to add them in to her 8 year old post…and I realized I had not written one yet. Gah! So, now I am going to go back in time and write a post based on her likes, dislikes, etc. from a few months ago. #MomFail but yall know I love that kid! Ok here we go:

Emma Kate was 69 pounds and just shy of 4’7″ at 8 years and 4 months old. This puts her at the 94th percentile for height, and 81st percentile for weight. She is skinny, but she is SOLID!

We spent her 8th birthday at Dollywood (happened to fall on a Saturday!) and had a great time like last year. Every year I think she has changed way more than the year before, and then the next year proves me wrong!

She had a Hocus Pocus themed birthday at a local trampoline park, and it was so much fun!

She finished out her 1st grade year in Mississippi, and then we moved to Knoxville in the summer. She is now in 2nd grade and killing it! She just got all A’s on her first semester report card.

She is wearing a size 4-4.5 shoe, and I had to buy her new socks in a women’s size! For clothes she can still fit into an 8 in shirts, but needs a 10 for dresses and pants (some brand od 10/12 pants are TOO SHORT, it’s wild yall!)

This kid still loves her iPad and loves playing Minecraft. She even plays some with Bobby which has been a fun bonding experience for them.

 

Last summer, she went to Wow week at Broadmoor, and also attended two basketball camps before we moved to Tennessee. She attended an all day/weekday camp in Knoxville and did not love it, so we aren’t going to do that again this year. She LOVES to talk still and apparently that camp didn’t let you talk much! She still misses and talks about CC Ranch all the time.

We traveled plenty in the past year, with trips to Disney, Pigeon Forge, Nashville, and the beach. She still hates long car rides but loves to experience fun places!

She makes friends wherever she goes, and isn’t afraid to walk up to a kid and start playing, which is nice for me and Bobby, especially at the beach or pool.

She is still into basketball and “practicing ninja” and has been working on her handstands and backhand spring with Bobby. She is way more flexible than I ever was!

She is still an early riser, up usually before 6, but 6:15 at the latest. Thankfully she doesn’t wake us up! She goes to bed at 7:45 on the weekdays and 8:15 ish on weekends. And no, it doesn’t matter what time she goes to bed, she is still up early! lately she has waffled on what she wants to be when she grows up, saying veterinarians have to go to a lot of school and also see blood. Haha. Now she thinks she wants to be a Youtuber part time and an animal trainer at the zoo part time.

She is also way braver than I was at her age and will ride lots of roller coasters! On our recent Disney trip she did the Avatar ride and Test Track for the first time and loved them.

She played basketball again this past year and is so competitive, even with board games or any game. She still loves candy and cookies, but also loves cheese, chicken tenders, mac and cheese, larabars, ruffles chips, ham, and popsicles. She is making new friends here in Tennessee, and is thriving. We are so blessed that she is in good health, and has such a tender heart towards others, especially those with special needs. She loves a playmate, no matter who you are, and is still our “mama hen” always carrying around someone’s toddler. I’m so glad that I write these posts to remind me of her sweet little personality as time goes by.

We love you so much Emma Kate! You are fiesty, smart, sweet, and cuddly, Stop growing up so fast!

We didn’t set out looking for a “perfect” trip… we We didn’t set out looking for a “perfect” trip… we just needed a break from the noise.
What we found in Florida was something better than that. #ad

Our first stop in Auburndale was all about slowing down in the best way. We stayed in a cozy tiny home at Camp Margaritaville (you can also stay in an RV!). We enjoyed coffee on the porch, our daughter loved the pool and waterslide (there is even a splash zone for the littles!), and at night we slowed things down with s’mores instead of screens. It felt like nature + comfort + family time all finally in the same place. They have so many other amenities like mini golf, golf cart rentals, pickleball, a playground, cornhole, and more. Nearby, we explored the Florida Children’s Museum and had incredible food and drinks at Smith’s American Tavern and Black & Brew Coffee. 

Then, we headed over to Fort Myers to experience a completely different side of the state. Shelling walks at sunrise, beach volleyball, pool cabanas, and the kind of Gulf sunsets that make everyone go quiet for a minute. Direct beach access at the Margaritaville Beach Resort Fort Myers made it effortless to go from “let’s check it out” to toes in the sand in minutes. There were several restaurants on property, so we never even got in our car. That plus live music, fire pits, the spa, and lawn games made it easy to want to stay put and relax.

What stood out most wasn’t just the scenery… it was how easy it was to actually be together here. No rushing or overplanning. That’s the true Floridays feeling for me. Laid-back, a little unexpected, and exactly what we didn’t know we needed. 🌴☀️

Dancing Bear Appalachian Bistro took part in Cork to Fork on the Tennessee Whiskey Trail, and every bite felt like a love letter to local flavor. From bourbon-glazed pork belly to a warm cinnamon-bourbon bread pudding that honestly didn’t stand a chance at our table… this was one of those meals you remember.

Mountain views, chef-driven dishes, and whiskey worked right into the menu in the best way. 😋
