5 Things Friday

1.) September 11th. Where were you? I was a junior in high school and I still remember sitting in class, and another teacher came in and whispered something into my teachers ear. I will never forget the look on his face, it still makes me stomach turn. Let’s continue to pray for the families of the victims, and for our country as a whole.

2.) Fall decorations. What is the “rule” in your house on when you decorate? typically I decorate labor day weekend/beginning of September, but I haven’t yet. Emma Kate’s birthday party is the 19th and I don’t want the house to look cluttered with fall décor + her party decorations, so I may just wait until after that.

3.) The treadmill boost. I ran on the treadmill yesterday, and my time was way better than it has been outside (air conditioning plus running on a belt changes many things!) What are your thoughts on this? I know running outside is totally different, but I really needed the confidence boost of running in the non 100+ degree heat to see what I could do.

4.) Recipe help. I need some new, EASY and QUICK chicken recipes. Help a sister out. I’m getting tired of the same old stuff. I have a great enchilada soup recipe I will start once it gets cooler!

5.) Gorgeous clothes. Check out my new Fabletics outfit. Isn’t it gorgeous? I am loving the romantic print and deep purple. I will post a pic soon of me wearing it. We are supposed to have cooler weather this weekend so maybe I will run in it!

    Wow, I can’t believe Emma Kate is going to be a year old already!

    I don’t currently have access to a treadmill, but I could sure go for a non-humid run for a bit of a confidence booster, my runs have felt so sluggish recently!

    I have a great chicken recipe but I haven’t posted it yet. It’s been a family favorite since I was a baby and I do cheat and get the rotisserie chicken from the grocery store. It’s got chicken and veggies and pasta, so nothing fancy but so good.

    I was working in a real estate office at the time and we were about to have our sales meeting. I will never forget my boss came running in and said we were under attack. Scariest moment! We canceled the meeting and most of us were glued to the television the rest of the day.

    Parmesan Chicken Bake

    6 boneless, skinless chicken breasts
    1 C greek yogurt (I use 2 cups for extra sauce)
    1/2 c fresh parmesan cheese, plus more for the top
    1 1/2 tsp seasoning salt (Not regular table salt)
    1/2 tsp pepper
    1 tsp garlic powder

    1. Preheat oven to 375 degrees and spray the inside of a 9×13 glass pan. Lay the chicken inside the pan.
    2. Mix together the remaining ingredients and spread evenly over each piece of chicken, being sure to cover all the exposed raw meat (so it doesn’t dry out.) Sprinkle on a bit more fresh parmesan over all the chicken.
    3. Bake uncovered for 45 minutes. This dish is even better the next day, so just reheat in the microwave!

    Healthy and so yummy!

    I actually wrote about running on a treadmill recently on my blog at http://tgirunday.com/2015/09/06/training-plan-for-2016-dopey-challenge/ . I’m training for Dopey and deployed so running on a treadmill is one of the best and safest ways for me to get the miles in.

    I really like that Fabletics outfit! I’ve been wondering how the fabric was so I hope you’ll try it out and let us know.

      Good luck with dopey! It was fun once but I don’t plan to do it again haha.

    2. I don’t decorate for fall until October 1st. I don’t know why, but that’s just how I roll. I also don’t decorate for Christmas until December 1st. Two full months of fall for me! I may start earlier this year…the first day of fall is the 23rd and it’s my day off so…
    ALSO! I have fun with Emma’s birthday party! Milo doesn’t get a first birthday party…I’m just not doing that. lol
    4. Here is a good chicken recipe that my husband RAVES about. It’s quick, it’s easy and I substituted chicken breast for the chicken thigh (I’m not a thigh person): http://damndelicious.net/2014/12/31/lemon-butter-chicken/

    I got another quick (10-15 minute) recipe for sausage, potato and spinach soup from the same website as above – it’s amazing!

    Sept 11 I was on the marching field practicing our show. i played clarinet. since we were in the parking lot we didnt hear the announcement and were really confused coming into school and people were freaking out. we watched the news for the entire english class it was so surreal. i dont have any easy chicken recipes though, pizza I got you covered 🙂

    Our favorite chicken slow cooker meal: Chicken Pesto

    1lb boneless skinless chicken breast
    1 container of pesto
    1c. Ranch powder mix
    1c. Chicken broth

    Throw together in the crockpot and cook on High for 3 hours, low for 4 hours. Shred and serve over butter noodles. Top with some Parmesan cheese. Enjoy!!

    1) Sept. 11 – at work and daughter was in kindergarten. My husband called and we thought it was a commuter plane at first. Not a strong internet in 2001 and ended up going to the gym at work and watching everything else on TV.

    2) Found this on the Today show site:

    Also, frozen chicken breast, jar of salsa, can or two of black beans, and package of taco seasoning. In the crock pot then shred up the chicken and serve in tacos, nachos, over rice, etc.

The interactive exhibits made history come alive, and it was such an emotional, unforgettable experience for all of us. 

And to end the weekend, we dove into adventure at Pirates Voyage Dinner & Show.  Led by Captain Blackbeard himself, the Crimson and Sapphire crews battled for treasure with acrobatics, mermaids, fire stunts, and even a sea lion! Between the four-course pirate feast and the jaw-dropping stunts, it was nonstop fun and the perfect grand finale to our Pigeon Forge weekend. 🏴‍☠️ 

 This trip reminded me that time together really is the best gift. Add Pigeon Forge and these incredible attractions to your holiday must-do list this season. ❤️
