Cheesy Crock Pot Chicken

Evening all! Sorry I have been MIA all day, been busy busy! Bobby and I went grocery shopping, I made a new recipe for dinner, had to run some errands, etc. Hope everyone is already enjoying their weekend.

 

When it comes to cooking, a lot of times I am all about quick and simple. This recipe I tried tonight sure was both of those, and it was also good!

 

First I mixed a can of cheddar cheese soup with a can of low sodium cream of chicken soup as seen above. The I cut up 3 boneless skinless chicken breasts in halves, put some all seasons on them (or salt and pepper, whatever flavoring you want) and threw them in the crock pot with my soup mixture.

 

 

 

I let it cook on high for a couple hours then on low for about another hour (we were in a time crunch, or I would have cooked it on low the whole time.) While that was cooking, I cooked some noodles to go with my chicken.

Here is the finished product. It was pretty good to be so easy! Also, we have leftovers, always a plus!

 

Bella sat under the table while we ate. Hoping for a scrap maybe?

 

After dinner I had to run another errand, and I picked up a treat on the way home!

 

I haven’t had Bop’s in SO LONG. I got Oreos mixed in. YUM! It was so rich I couldn’t finish it all on the drive home.

    I make a similar crock pot recipe for chicken and dumplings. I can’t wait til it finally gets cold so I can eat it. I can’t do hot, hearty stuff in the summer.

    Mint chocolate chip. Though I had heath bar ice cream tonight that was pretty unbelievable.

    While reading your post, all I could think was “mmm!” I love simple dishes, with not a lot of clean up. As for my favorite ice cream flavor, it has to be mint chocolate chip..I know, pretty generic flavor, but so good!

      def not a lot of cleanup, just the cutting board, crock pot, a pot and a bowl!
      mnt choc chip is good!

      chocolate is good, sometimes its too chocolaty for me though, but frozen yogurt would prob be less sweet than ice cream, so yum!

I turned 40 today. 🎉 Hitting a milestone like t I turned 40 today. 🎉 Hitting a milestone like this has me reflecting—not just on what I’ve accomplished, but on who I’m becoming.

I’ve always been driven to achieve, to push, to prove. But lately, I’ve been learning to celebrate presence over performance, connection over perfection.

Today wasn’t about checking a box or hitting a goal—it was about pausing, feeling grateful, and eating a ridiculous amount of cake with people I love. And honestly? That feels like growth.

Here’s to 40: more aligned, more grounded, and still a little extra. 😉
