Cream Cheese Danish

Afternoon! I just got off the elliptical and am contemplating a run as well. I am so unmotivated right now! I thought while I contemplated I would share a recipe with you. I made this for breakfast Christmas morning and we ate it and drank mimosas. it was fabulous! This can be served hot or cold (I like it better hot!)

Cream Cheese Danish

Ingredients:

-2 cans crescent dinner rolls

-1 and 1/2 cups sugar

-1 tsp vanilla flavoring

-2   8 oz packages of cream cheese (I use reduced fat)

-1 egg

-1 cup chopped pecans

-1/2 stick butter

Directions:

preheat oven to 350.

spread one can of dough in greased 9 x 13 baking dish, pressing together seams and pushing to corners of pan.

Mix cream cheese, 1 c sugar, egg, and vanilla until a spreading consistency.

Spread mix over rolls.

Open second can of rolls and put on top like you did the first.

mix rest of sugar and pecans and sprinkle over tops.

Melt and drizzle butter over sugar and pecans.

Bake at 350 for 25 min or until golden brown.

I did pecans on half in case someone didn’t like or want nuts.

    It’s ironic that Christmas morning was the only time we didn’t do a real brunch… just leftovers/make your own (we were in a hurry to open presents and then be off to the family gatherings!).

    Cream cheese… my friend introduced me to a new dip that uses it. The dip may or may not be life changing. Sigh…

    That looks so good! I make eggnog waffles for b’fast on Christmas morning. This year, however, I made pumpkin waffles b/c I ran out of eggnog. :-O

    I always make overnight french toast for Christmas breakfast. This year it was extra yummy because I used cinnamon swirl bread from Great Harvest. Beyond amazing.

    This sounds freaking amazing. If I had not made the can of crescents tonight, I so would have done this in the morning. I wonder if I could halve the recipe with my one remaining can of crescents…?

    I’ve made a recipe very similar to this and then you cut the whole thing into bars and serve them that way. My office calls them “crack bars” because they are like crack they are so good!

    I love that recipe too! In my hometown they call it “Sopapilla Cheesecake” (what can I say, Oklahoma is sort of close to Texas???). I have never put nuts in it before though- I will have to try it.

      I decided the same thing about the sugar topping. It ended up being too much for us, too!

I used to think dairy-free desserts were “just o I used to think dairy-free desserts were “just okay.” Like, fine in a pinch… but never something I craved. 👀

But then this little picnic happened—just me, my girl, and a sweet treat we both loved enough to fight over the last bite. 😅

We’ve been trying to be more mindful with food choices lately (especially with summer travel coming up), and I grabbed these So Delicious treats at Kroger kind of on a whim. 🚨 Homeschool decision!! If you have been aroun 🚨 Homeschool decision!!

If you have been around here since Christmas time, then you know we pulled Emma Kate out of her private school after the first semester and put her in a hybrid homeschool for the spring. The main reason being we wanted more absences than the school allowed. 

What is a hybrid? In our case, she went to a school all day 3 days a week, and we taught her at home two days a week. 

It seemed like the best of both worlds, not having absences count since we were also her teachers, being able to stay home some, sleep in, and travel. 

Well, it wasn’t all rainbows and butterflies. For one, the school we sent her to ended up not being what we thought. We were told being absent wouldn’t be a problem, but it became clear very early on her teacher was not a fan and she was not kind or accommodating to Emma Kate. There’s a lot of other reasons we didn’t blown the school I won’t go into. (If you are local and considering hybrid feel free to dm me and I will share my concerns and grievances.)

Teaching your kid is hard. There were lots of tears and frustrations, and she got bored since Bobby and I also work from home/I’m not a stay at hoke mom. We couldn’t just sit with her all day and teach her with our crazy long hours owning two businesses. 

It was tough to keep a schedule and while getting to travel a lot was great, she didn’t thrive on not having a routine and struggled with the randomness of everything.

She is also a very social only child who missed her friends and also wants to play sports for her school.

 In the end while there were a lot of pros to hybrid homeschool, the cons outweighed them for us so we are returning to her old school in the fall. 

Am I glad we did it? Yes! I always would have wondered otherwise and now we know. We will still be pulling her out of school some to travel in the fall, just not as much.
