Emma Kate Does Disney: Part 3

I left off part 2 with us going to bed Thursday night. Friday morning, my dad and I drove to Tampa to look at homes with the realtor while my mom stayed behind with Emma Kate. They went to Disney Springs for the morning while we were gone, and then the playground after nap.

Dad and I also looked at a couple daycares and found one I loved. I found a house that we ended up putting in an offer on that evening, and after stopping at the grocery store in Celebration and then picking up pizza, we headed to the pool and met up with my mom and EK.. Eating pizza at the splash pad area while EK played was a nice relaxing time, especially after a crazy day house hunting. (there may have been wine involved, too. Ssshhh)

On Saturday we got up early and headed to Animal Kingdom. EK loves animals, so I was excited to take her on the safari ride in particular. We had fastpasses and headed there first thing. It was a cool morning so the animals were all out and about and active. We even got to hear the male lion roar which I had never heard before.

After that we walked through some of the zoo like areas, and then headed to the boneyard playground where we stayed for over an hour. I loved that it was closed in so I didn’t have to worry about Emma Kate running off.

We waited for lunch at Flame Tree BBQ and ate down by the water. We also rode triceratop spin and I really can’t remember what else.

Emma Kate was getting super tired and so we decided to head back to the resort after lunch so she could get in a good nap.

During nap my dad and I walked around the resort and even went to the hot tub for a little while.

We had chef Mickey’s brunch reservations at 2:30, so we loaded up and headed to the contemporary for a late lunch/early dinner. I was so curious to see how Emma Kate would do with the fab five after doing just so-so with the Winnie the Pooh characters.

    I have yet to visit Animal Kingdom. But, we got annual passes for the family for Christmas this year, so I will be going very very soon.
    Glad EK is enjoying everything!

We didn’t set out looking for a “perfect” trip… we We didn’t set out looking for a “perfect” trip… we just needed a break from the noise.
What we found in Florida was something better than that. #ad

Our first stop in Auburndale was all about slowing down in the best way. We stayed in a cozy tiny home at Camp Margaritaville (you can also stay in an RV!). We enjoyed coffee on the porch, our daughter loved the pool and waterslide (there is even a splash zone for the littles!), and at night we slowed things down with s’mores instead of screens. It felt like nature + comfort + family time all finally in the same place. They have so many other amenities like mini golf, golf cart rentals, pickleball, a playground, cornhole, and more. Nearby, we explored the Florida Children’s Museum and had incredible food and drinks at Smith’s American Tavern and Black & Brew Coffee. 

Then, we headed over to Fort Myers to experience a completely different side of the state. Shelling walks at sunrise, beach volleyball, pool cabanas, and the kind of Gulf sunsets that make everyone go quiet for a minute. Direct beach access at the Margaritaville Beach Resort Fort Myers made it effortless to go from “let’s check it out” to toes in the sand in minutes. There were several restaurants on property, so we never even got in our car. That plus live music, fire pits, the spa, and lawn games made it easy to want to stay put and relax.

What stood out most wasn’t just the scenery… it was how easy it was to actually be together here. No rushing or overplanning. That’s the true Floridays feeling for me. Laid-back, a little unexpected, and exactly what we didn’t know we needed. 🌴☀️

Dancing Bear Appalachian Bistro took part in Cork to Fork on the Tennessee Whiskey Trail, and every bite felt like a love letter to local flavor. From bourbon-glazed pork belly to a warm cinnamon-bourbon bread pudding that honestly didn’t stand a chance at our table… this was one of those meals you remember.

Mountain views, chef-driven dishes, and whiskey worked right into the menu in the best way. 😋
